We are looking for a passionate, highly skilled culinary professional to manage and lead a team of dynamic chefs. This is a rare opportunity to join a high profile establishment.

The ideal candidate will be responsible for the consistent preparation of innovative and creative cuisine of the highest quality, presentation and flavour for the dinning rooms, banquets and other food operations, resulting in outstanding guest satisfaction. A hands on approach is extremely important.

Responsibilities:

• Provides direction for all day to day kitchen operations
• Train, develop and motivate team to exceed food standards
• Ensure Culinary standards and responsibilities are achieved
• Responsible for seasonal menu development and improving kitchen standards
• Ensure all HACCP and Health and safety regulations are adhered to
• Review staffing levels to ensure that guest service, operational needs and financial objectives are met
• Responsible for budgeting, forecasting and ordering of all kitchen products
• Interact with Banquet chef and Food and Beverage department on training regarding food knowledge and menu composition
• Attend senior management meetings as required

Requirements:

• A minimum of 2 years experience in a similar role
• Bachelor Degree in Culinary Arts or experience equivalent
• Strong knowledge of HACCP legislation
• Detailed knowledge of purchasing, ordering, receiving, food costing, inventory procedures budgets and payroll management
• Provide and support service behaviours that are above and beyond for guest satisfaction and retention
